The Wine
Cabernet is among the most popular red wines in America. And while we made our reputation by helping wine lovers discover NEW favorites, when a nice wine like this comes along at a great price, I feel compelled to introduce it to our Cab-loving clientele.
Aromas of black cherry and ripe plum mesh with blackberry spice and violets. Flavors explode on the palate, with velvety tannins and elegant acidity on the finish. Becasue the wine is so well balanced between fruit, acidity and tannin, it is adept at pairing with a range of dishes, though I tihnk it does best when paired with richly flavored foods and those that bring a bit of fat - red meats, duck, etc., though it holds its own with cheeses, grilled vegetables and roasted red meats.

The Vineyards
Though the wine is over 75% Cabernet, "Sebastian’s Infinite Limits” describes the nearly infinite permutations of possible blends of the grapes and vineyards in this Bordeaux blend.
First Knuttel selected Cabernet from Rafanelli’s blocks in Western Dry Creek Valley and from Fred Peterson’s Bradford Mountain vineyards to the north. Peterson's Malbec was also blended in to add bright fruit notes, as was Merlot from Woods Vineyard, adding its unique spice notes.

William Knuttel's winemaking bona fides make for some impressive reading:
Saintsbury, 1983 - 1996
: Knuttel led wine-making efforts for this wonderful producer of Pinot and Chardonnay, changing the way those varieties were produced in California. At this same time, Knuttel also became owner/winemaker of

, producing fine Pinot Noir, Syrah and Zinfandel.
Chalk Hill Winery, 1996 - 2003
: Specializing in ultra-premium Chardonnay, Cabernet Sauvignon, Sauvignon Blanc and Pinot Gris.
Dry Creek Vineyard, 2003 - 2011
: He re-defined the styles and quality of their extensive portfolio.
Ottimino, 1999 - Today
: When Sonoma Zinfandel producer, Ottimino Crisiani, retired to his native Italy, Knuttel was selected to take over produciton. These wines over-deliver for their price.
Knuttel Family Wines, 2011 - Today
: Producers of single-vineyard wines as well as a coveted series of regional wines at very reasonable price points.
