"Cava" is the Spanish word for "Cave", a reference to the burrowed tunnels that provide homes to millions of bottles of Spanish sparkling wines produced with their secondary fermentation occuring in the bottle. The bottles lay in quiet repose inside these dark, cool caves until their penultimate uncorking, and then for some time prior to release.
This beautiful (and affordable!) Brut Reserva Rose Cava is traditionallly a blend of Monastrell (aka Mourvedre), Garnacha (aka Grenache) and Pinot Noir, and spends ~18 months in in the caves prior to release. As with all high-quality sparkling wines the world over, the secondary fermentation occurred in-bottle, the method attributed to the Champenoise.
This wine is only slightly shy with its aromas - a tantalizing combination of fresh strawberries, cherries and blueberries. The effervescence is persistent, with tiny, well-formed bubbles, good structure, and a dry, surprisingly intense mouthfeel. Drink now through 2022.
