The Wine
Ever since owner/Winemaker Toby Hill has started keeping company with one French ex-pat (now his partner/fiance) it seems his winemaking style has become a tad more Burgundian.  And that's not a bad thing, given that Anderson Valley provides growing conditions that produce wines of this restrained and filigrieed style.

This wine is young, young, young, and is still delicious now. But those who can store it in an out-of-the-way place and ignore its siren call for a few years, well, those people will be rewarded with tremendous pleasures. Drink now through 2030

Food Pairings
Duck Confit is a must!  Especially if served with any sort of complimentary cherry sauce/side.  Salmon for sure, especially grilled.  Chicken is a definite, though I'd avoid lemon (not for the acidity, it can surely match it, just for the clash of flavors).  Oh don't forget roasted lamb (click on my recipe link and search for "Dead Easy Leg of Lamb!", Daub de Provencal, Cassoulet and Foraged Mushrooms.
