The Wine

A rare blend of Pinot Grigio, Friulano and Ribolla Gialla - the big three white wine grapes of Friulano - produces a refreshing, aromatic white wine at a great price. Not a usual part of the Volpe Pasini line-up, I jumped on this affordable white wine as soon as I tasted it - aromas of ripe yellow peaches, apples and lemon/lime citrus notes. The enticing salinity on the finish begs for paring with shellfish.

Speaking of pairings - enjoy this wine with summer salads, vegetarian dishes, shellfish and cheeses. For a traditional pairing from the Friuli region, find a recipe for Frico - the rustic and delicious cheese and potato dish of the Friuli Venezia Giulia region. I like the one found here:

The Winery

Founded in 1596, Volpe Pasini is the oldest wineries in Italy's nothern region, and the wines are still produced in the old facility, though with thoroughly modern production facilities. Visitors can also rent rooms on premise for rather reasonable prices ranging from 88 Euros for the smallest room to 200 Euros for the two-bedroom suite - quite a bargain to spend time in this old facility.
