The Wine

Surprisingly, the nuanced wines of Jurançon are still flying under the radar of most wine lovers. Modern wine trends have largely ignored the remote southwest region of France despite the fact the region is home to delicious, low-alcohol and low-intervention wines for decades.

These are long-lived wines that improve for years and years. A blend of Gros Manseng and Petit Manseng (75% / 25%) from vines averaging 40 years of age. Fermented in stainless steel and aged for almost 2 years in a combination of foudres and barrique. Fermentation is arrested at 85 g/L of natural sugar to balance the wine's mouth-watering side.

The Winery

Clos Guirouilh seems to have been frozen in time. Most things are still done as they have been for centuries, with a few selected modernisms that help improve the wines. The grapes are still hand-picked well into December, with at least three passes (and often many more in exceptional years) to harvest only the ripest grapes.

All wines are spontaneously fermented with indigenous yeasts in Guirouilh's ancient, cold cellar. No temperature control is used (or needed, frankly) - because the cellar is already cold when the grapes come in, alcoholic fermentation crawls along until spring when it picks up again and finishes prior to bottling.

Nothing is rushed, and there are no concessions to the modern world. The wines are rooted in history, uncompromising and majestic.
