An elegant champagne with an enthusiastic bead. This is 100% Chardonnay ('Blanc de Blancs', so what else could it be?!) from four areas - Cuis, Chouilly, Epernay and young vines from Cramant. Located in the prestigious Cotes des Blancs area (insert sound of angels singing) within Champagne. The Cotes des Blancs translates as "Hills of White", the name derived from the chalky soils that lend these Champagnes a distinctive, crisp character and the utmost in elegance. These wines mark a distinct contrast to the richer Pinot-dominant Champagnes from the Reims area, just to the north.
To maximize the enjoyment of this wine, it's recommended that it be served just below 50°F in the heat of summer and just a bit warmer - about 55°F - during the cold winter months!

The Winery
As the hyphenated name implies, this winery is the made up by the intersection of two families - the Diebolts who made wine in the Champagne region and the Vallois who grew the grapes. Their respective winemaking history dated back over a century before they came together through marriage. They are now gradually passing the baton to the next generation.
