The Wine
Crafted from the indigenous grapes of the Txakolina DO (CHALK oh LEAN ah).
The grape is fun to say - hondarrabi zuri (honda-ROB-bee ZUR-ee) - but even more fun to drink.
The wine offers a counter argument to the region's traditional glu-glu wines (fun quaffing wines you don't have to think about), providing convincing evidence of the region's ability to produce wines worthy of white table cloth restaurants.
For example, the grapes are manually harvested, avoiding clusters that aren't ideal. After a brief soak, the de-stemmed grapes undergo fermentation with the winery's native yeasts. After fermentation the wine ages in contact with the lees (adding roundness to the natural acidity and that nice yeasty essence that begins in the wine's aromas) until bottling the following March without fining or filtration. The sediment/haziness in the wine? All part of the plan, Stan.
The Winery
Perched on steep, lush green, sea-side cliffs overlooking the Bay of Biscay, Doniene Gorrondona was built in 1852. It's near the village of Bakio, near Bilbao, in the Spanish Basque Country.
They were one of three pioneers dedicated to reviving the txakolina traditions near Bilbao, creating the Bizkaiko Txakolina DO in 1994. Prior to that, the txakolina winemaking traditions were nearly lost, with many vineyards uprooted in favor of more profitable endeavors, namely the construction of seaside homes.
Doniene Gorrondona is dedicated to rejuvenating their local winemaking traditions and honoring txakolina's contribution to the gastronomic and cultural history of their village. Unlike some of their neighbors, Doniene Gorrondona eschews the use of international varietals, believing in the traditional local grapes, thus creating FAR more interesting wines for our curious wine-loving customers.
