Slow-cured from Heritage breed pork, Chardonnay, fennel and sea salt. Grab a bottle of your favorite Italian wine and one of these "Chubs" and you're half way to a great sunset picnic. Just add good company.

The Company

I first met Peter Seghesio in the 1980's at a tasting in Chicago. I was surprised at the value of his family's wines, and when asked about it he indicated it was "because my dad doesn't pay his kids a market wage!". Over the decades, Peter rose to take over the reins from dad, managing the Seghesio family winery for years until selling it around 2016 or so. The Journeyman Meat Company was Peter's next venture, and extension of a butchery and salumeria he'd been running alongside the family winery, only now he had the time and resources to expand it into a full-time endeavor.
